This great mid-week meal is quick to assemble and utterly delicious, ideal for that after-school dinner rush.


12 Prawns, peeled, shelled and deveined

500g Cod fillet

500g Smoked haddock fillet

500g Salmon fillet

3 Large scallops- skirts removed

10 Boiled quail eggs

1 Small bunch of blanched young leeks

250g Grated cheddar cheese

400ml Double cream

100ml Milk

2 Stock cubes (chicken or fish)

Creamy mash potato- for the perfect pie topping!


Take the cod, smoked haddock, and salmon fillets and cut into large chunks. Place the fish pieces into a round pie dish that’s about 12 inches in diameter. Cut the scallops in half and add to the dish along with the prawns.

Add the cream to a pan and heat gently. Dissolve the stock cubes, and bring to a boil. Reduce the mixture so that it’s deliciously thick. Pour the mixture over the fish.

Add the boiled eggs and the blanched young leeks, and top the mixture with a hearty sprinkling of cheddar cheese. Pat down lightly.

Take the mash potato and pipe onto the top of the pie. Sprinkle the top of the mash with cheddar to give it a yummy, cheesy crust.

Place the fish pie in the oven on a high heat for approximately 15 minutes. When the top has browned, take out of the oven and sprinkle with herbed breadcrumbs. Serve immediately (why would you want to wait!?)
