Lentils are a great source of protein and cholesterol-lowering fibre. Plus, compared to other types of dried beans they are relatively easy to cook!

Ingredients

SPICED LENTILS RECIPE
50G SWEET CHILLI SAUCE
50G WORCESTER SAUCE
5G SALT
1G PEPPER
1 STAR ANIS
50G KETCHUP
100G LENTILS
30G CHOPPED SHALLOT
4G PUREE GARLIC
50mls OLIVE OIL

Cover the lentils in water in a small sauce pan then cook at a low temperature without simmering until the lentils are just soft, this avoids the lentils cracking and going mushy, they are nicer slightly ‘al dente’

In another small saucepan cook the shallots, garlic, star anise and olive oil together also at a low temperature. Do not caramelise the shallot, just enough to make them soft and keep them sweet.

Combine all ingredients together in a pan and bring to a simmer then pull off and rest before serving .
