With Richard away on holiday, we asked Paolo at the Pearson’s Arms and Will at The Windmill for some recommendations this month…

PaoloPaolo’s current favourite dish

“My favourite dish at Pearson’s changes all the time as Craig’s food (head chef) is delicious. But if I really had to choose I would go for the smoked haddock with poached egg and the light curry sauce at the moment, it works so well all together.” The haddock can be found on our à la Carte and, incidentally, is brilliant value at £14.95.

Will’s current favourite dish

“Definitely the duck. I always like using the whole animal in one dish – it means you get a great variety of flavours and textures from one source. And the fresh asparagus it comes with is perfect right now.”

It’s a summer dish that isn’t salad, and has been flying off the menus recently.

Paolo’s current favourite drink

“My favourite drink is a classic but always great… amaretto sour (of course it had to have something Italian in it!). It has been updated through the years I have been here but now I think we got the perfect recipe.” If you’re looking for the ideal time to try it, come down for 2-4-1 cocktails on a Wednesday or a Friday.

Will’s current favourite drink

ChefWillIt’s gin weather at the minute, and Will’s very proud of the wide selection The Windmill now offers. “We now have 7 gins and are always looking to add more. My favourite is Bathtub gin – if you haven’t tried it, you really should.”

And for the perfect pint, he’s a big fan of Longman brewery. “The blonde beers are especially awesome” he says.
